Traditional Goan Mushroom Xacuti
Mushrooms, also known as alambi, are loved by many people today. Young people, in particular, enjoy eating a variety of mushroom dishes. However, the mushrooms commonly available today are generally cultivated using artificial methods. Compared to these commercially cultivated mushrooms, fresh mushrooms are exceptionally delicious, especially when used to prepare a traditional Goan dish like mushroom xacuti.
Fresh wild mushrooms can be seen in local markets for a few days during the monsoon season. When prepared in the authentic Goan style, fresh mushroom Xacuti/Shakuti is incredibly delicious. The taste of fresh mushrooms is somewhat similar to that of non-vegetarian food. If you get a chance, do try this delicious traditional Goan mushroom curry at least once.

Ingredients for Fresh Mushroom Xacuti
Main Ingredients
- Fresh mushrooms (Alambi): 1 packet (approximately 60–70 mushrooms)
- Fresh grated coconut: 1½ cups
- Large onion: 1, sliced lengthwise
- Medium-sized onion: 1, finely chopped
- Tomato: 1, finely chopped
- Oil: 2–3 tablespoons
- Turmeric powder: ½ teaspoon
- Ginger: ½ inch
- Garlic cloves: 5–6
- Salt: To taste
Ingredients for Green Masala Paste
- Fresh coriander leaves: 1 cup
- Garlic cloves: 10–12
- Ginger: ½–¾ inch
- Green chilies: 1–2
- Lemon juice: 1 tablespoon
Spices for Goan Mushroom Xacuti Masala
- Dried red chilies: 8–10
- Coriander seeds: 1 tablespoon
- Cloves: 2–3
- Black peppercorns: ½ teaspoon
- Cinnamon: 1 inch
- Cumin seeds: 1 teaspoon
- Fennel seeds: ½ teaspoon
- Mace: 1 small piece
- Bay leaf: 1
- Green cardamom: 2
- Black cardamom: 1
- Star anise: 4 petals
- Poppy seeds: 1 teaspoon
How to Make Fresh Mushroom Xacuti
- First, remove all the soil from the mushrooms and wash them thoroughly three to four times.
- Grind the ginger, garlic, coriander leaves and green chilies together with the lemon juice to make a fine green masala paste.
- Roast all the dry spices one by one in a little oil. First roast the dried red chilies. Then roast the remaining spices, and finally roast the poppy seeds.
- In a little oil, roast 5–6 garlic cloves, ½ inch of ginger and the sliced onion until golden brown. Roast the fresh grated coconut until it also turns golden brown.
- Once all the roasted spices, onion and coconut have cooled, add the turmeric powder and grind everything together in a mixer to make a fine paste.
How to Prepare Goan Mushroom Xacuti
- Heat 1–1½ tablespoons of oil in a pan.
- Add the finely chopped onion to the hot oil and sauté lightly for two to three minutes. Add the chopped tomato and cook until soft.
- Now add the finely ground green masala and a little salt to the onion and tomato mixture and sauté everything well. Once the masala begins to release oil, add the thoroughly washed mushrooms. Add one cup of water, cover the pan with a lid and allow the mushrooms to cook for 15–20 minutes. Stir occasionally and make sure that the water has not completely evaporated. Add a little more water if required.
- Once the mushrooms are cooked, add the finely ground Shakuti masala paste. Add enough water to achieve a medium-thick consistency for the Shakuti masala.
- Add salt to taste. Since a little salt was already added while cooking the mushrooms initially, adjust the quantity accordingly. Cook for another eight to ten minutes.
How to Serve Fresh Mushroom Xacuti
Garnish with finely chopped coriander leaves and serve hot. Mushroom Xacuti tastes delicious with chapati, Goan pav, or poie. Served alongside crispy semolina-fried mushrooms (Alambi Rava Fry), this flavourful Xacuti masala becomes an even more delightful and satisfying meal.
