Prawns Vindaloo is one of Goa’s most popular dishes. Made with fresh prawns, also known as sungta, shrimp or jhinga, this spicy, tangy and flavourful dish is a much-loved part of traditional Goan cuisine. Let us now see how to make this delicious Goan Prawns Vindaloo recipe at home.
Ingredients for Goan Prawns Vindaloo
- Prawns – 500 gms
- Onions – 2
- Turmeric powder – ¼ teaspoon
- Red chilli powder – ½ teaspoon
- Salt – as required
- Sugar – 1 teaspoon
- Oil – 3 to 4 tablespoons
Spices for the Vindaloo Masala Paste
- Kashmiri red chillies – 6–7
- Goan local chillies or Bedgi chillies – 4–5
- Ginger – 1 inch piece
- Garlic cloves – 8–10
- Onion – 2–3 vertically sliced pieces
- Coriander seeds – 1 tablespoon
- Cumin seeds – 1 teaspoon
- Mustard seeds – 1 teaspoon
- Cloves – 3–4
- Black pepper – ½ teaspoon
- Mace – 2 pieces
- Cinnamon – 1-inch stick
- Green cardamom – 2
- Goan vinegar – ½ cup
- Turmeric powder – ¼ teaspoon
How to Make Prawn Vindaloo
Step 1: Clean and Marinate the Prawns
First, remove the outer shells of the prawns, or sungta, and wash them thoroughly.
Apply turmeric powder, salt and red chilli powder to the washed prawns and allow them to marinate for half an hour.
Step 2: Prepare the Vindaloo Masala Paste
Soak the Kashmiri red chillies and Goan local chillies or Bedgi chillies in water for half an hour.
Finely chop the onions.
Take all the spices required for the Vindaloo masala paste in a mixer jar. Add vinegar and grind everything into a fine paste. Do not add any water while grinding the masala.
Step 3: Cook the Marinated Prawns
Heat oil in a pan and sauté the marinated prawns for 2–3 minutes.
Once the colour of the prawns changes, remove them from the oil.
Step 4: Cook the Vindaloo Masala
In the same remaining oil, add more oil if required and add the finely chopped onions.
Once the onions become soft and turn golden brown, add the prepared Vindaloo masala paste.
Stir the paste and mix it well with the onions. Cook this mixture for about 3–4 minutes.
When the colour of the paste becomes nicely dark and the paste thickens slightly, add two cups of water.
Add salt according to taste and one teaspoon of sugar. Stir well so that everything combines evenly.
Step 5: Add the Prawns and Finish the Curry
Add the prawns cooked in oil to this mixture and stir everything together again.
Cover the pan and cook for about 10 minutes.
After 10 minutes, you will see the oil separating from the mixture and the curry becoming slightly thick. Your Prawns Vindaloo is now ready.
