Traditional Goan Patolyo Recipe

Certain dishes have traditionally become associated with particular festivals. These food-and-festival combinations vary from region to region because every region has its own special traditional dishes. Goa too has several unique traditional recipes, and some of these dishes are closely associated with specific festivals. For example, Nag Panchami and Patolyo, Chavath or Ganesh Chaturthi and Nevri (Karanji), and Diwali and Pohe.

As Nag Panchami approaches, turmeric leaves begin appearing in local markets. Women also start asking each other, “Panchmik Patolyo kortale mago?”—meaning, “Are you making Patolyo for Panchami?”

The first and most essential ingredient in a Patolyo recipe is turmeric leaves. The connection between Patolyo and turmeric leaves is so strong that many people simply refer to turmeric leaves as Patolyo leaves.

So, let us now see how to make these delicious and traditional Goan Patolyo.

Ingredients for Traditional Goan Patolyo

  • Turmeric leaves: 5–6
  • Rice flour: 1 cup
  • Fresh grated coconut: 1 cup
  • Jaggery: ¾ cup
  • White sesame seeds: 1 teaspoon
  • Cardamom powder: ½ teaspoon
  • Salt: To taste
  • Ghee: 1 tablespoon

How to Make Goan Patolyo

1. First, wash the turmeric leaves thoroughly. If the leaves are large, cut them into two or three pieces.

2. Add water and a little salt to the rice flour and prepare a thick batter.

3. Heat about a tablespoon of ghee in a pan. Add the white sesame seeds, fresh coconut and jaggery, and sauté well. When the filling is almost ready, add a pinch of salt and cardamom powder. Mix everything well and turn off the heat.

4. Take one turmeric leaf. Spread the rice flour batter evenly over it and then spread the prepared coconut filling on top. Fold the turmeric leaf either vertically or horizontally. In the same way, fill all the turmeric leaves with the rice flour batter and coconut filling.

5. Heat water in a large pot. Place a steaming strainer over it and arrange all the prepared Patolyo inside. Cover the strainer with a lid and steam the Patolyo over medium heat for approximately 15 minutes.

6. Once they have cooled, serve them either with the turmeric leaves on or after removing the leaves.
